- Ingredients:
- 1 pound skinless, boneless chicken breast halves, cut into thin strips
- 1 (1.27 ounce) packet fajita seasoning mix
- 1 tablespoon vegetable oil
- 2 green bell peppers, sliced
- 2 red bell peppers, sliced
- 1 onion, sliced
- 1 cup shredded Cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8 (10 inch) flour tortillas
Directions:
- Preheat the grill for high heat.
- Toss the chicken with fajita seasoning, then cook and stir in a large skillet over medium heat for about 5 minutes, until cooked through.
- Preheat a large skillet over medium-high heat and add oil. Cook and stir bell peppers and onion until softened, about 5 minutes.
- Assemble quesadillas by placing an equal amount of Cheddar cheese on four of the tortillas. Top with chicken, vegetables, and Monterey Jack cheese. Cover with the remaining tortillas.
- Grill quesadillas, turning once, until cheese is melted and tortillas are nicely browned, 2 to 3 minutes per side. Cut into wedges to serve.
