Sweet Stiff Starter:

  • 15g sourdough starter
  • 45g bread flour
  • 20g water
  • 8g sugar

Dough:

  • 115g bread flour
  • 10g sugar
  • 2g salt
  • 80g milk
  • 10g unsalted butter
  • All of the sweet stiff starter

Instructions:

  1. Prepare starter, let it triple.
  2. Mix dough ingredients, add butter, knead to window pane.
  3. Proof for 2 hours.
  4. Shape dough into small balls with ears.
  5. Final proof for 3-3.5 hours.
  6. Bake at 165°C for 13-15 minutes.
  7. Decorate with melted chocolate.
