Sweet Stiff Starter:
- 15g sourdough starter
- 45g bread flour
- 20g water
- 8g sugar
Dough:
- 115g bread flour
- 10g sugar
- 2g salt
- 80g milk
- 10g unsalted butter
- All of the sweet stiff starter
Instructions:
- Prepare starter, let it triple.
- Mix dough ingredients, add butter, knead to window pane.
- Proof for 2 hours.
- Shape dough into small balls with ears.
- Final proof for 3-3.5 hours.
- Bake at 165°C for 13-15 minutes.
- Decorate with melted chocolate.
