Have you tried my coffee almond cookies? I’ve made so many batches, but they keep disappearing … 😄 The kids love them so much!
For those who don’t like coffee, swap the coffee powder for cocoa powder, and they’ll turn into delightful chocolate chip cookies.
Ingredients
- 250g unsalted butter
- 90g icing sugar
- 5g coffee powder
- 5g warm water
- 5g coffee emulco
- 300g all-purpose flour
- 1 tsp baking powder
- 120g crushed almond strips (pre-roast at 140°C for 10 minutes)
- 120g chocolate chips
Method
- Beat softened butter with icing sugar.
- Mix coffee powder with warm water, then add coffee emulco.
- Combine the coffee mixture with the butter mixture.
- Fold in flour and baking powder with a spatula until the dough is well combined.
- Incorporate the almonds and chocolate chips into the dough.
- Shape the dough into round balls.
- Bake at 180°C for 20 minutes.
