Ingredients
Sweet Stiff Starter:
- 25g sourdough starter
- 75g bread flour
- 32g water
- 12g sugar
Dough:
- 175g bread flour
- 20g sugar
- 4g salt
- 6g cocoa powder
- 95g milk
- 40g whipping cream
- 30g melted chocolate
- 20g butter
- 25g cocoa chips (optional)
- All of the sweet stiff starter
Pan Size:
- 8×8” (20x20cm)
Method
- Prepare the Sweet Stiff Starter:
- Mix the starter ingredients and let it triple in volume, about 7-8 hours at 27-28°C.
- Make the Dough:
- Combine bread flour, sugar, salt, and cocoa powder in a large bowl.
- Add milk, whipping cream, and all of the sweet stiff starter.
- Mix until the dough comes together. Then, add butter and melted chocolate in 2-3 batches, kneading until fully incorporated and the dough achieves window pane.
- Stir in cocoa chips, if using.
- Bulk Proof:
- Let the dough proof for 2 hours at 28°C.
- Shape and Final Proof:
- Punch down the dough and divide it into 16 equal portions.
- Round each portion and place them in an 8×8” (20x20cm) tin.
- Allow the dough to proof for 3.5-4 hours at 28°C.
- Bake:
- Preheat the oven to 170-180°C.
- Bake the buns for 20 minutes or until they are fully cooked and golden brown.
