- 1 tsp cumin
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp turmeric
- 1 red onion, finely chopped or grated
- 2 tbsp chopped fresh parsley
For the Tomato Sauce:
- 1kg ripe tomatoes
- 1/4 cup olive oil
- 1/2 red onion
- 1 small capsicum
- 2 cloves garlic
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp salt
- 1 tsp black pepper
- 1 chili
- 2 tbsp finely chopped parsley
- 2 tbsp finely chopped cilantro
To Finish:
- 4 eggs
- Fresh parsley
- Bread of your choice
🌟 Method 🌟
1. Preheat the Oven:
Preheat your oven to 200°C (392°F).
2. Prepare the Tomato Sauce:
Blend all the tomato sauce ingredients in a food processor until smooth. Set aside.
3. Make the Meatballs:
In a large bowl, mix the ground meat with paprika, cumin, salt, black pepper, turmeric, red onion, and fresh parsley. Use your hands to form the mixture into evenly sized meatballs. Place the meatballs on a baking tray and bake in the oven for 5 minutes.
4. Cook in a Skillet or Tagine:
In a skillet or the base of a medium- to large-sized tagine, spread 3 tablespoons of the tomato sauce. Add 5 meatballs and crack 1 egg in the middle. Cook on medium heat for about 5 minutes, or until the egg white starts to set (the egg will continue to cook even after you remove it from the heat).
5. Garnish and Serve:
Top with fresh parsley and serve with your favorite bread to soak up the rich tomato sauce.
