Blueberry Muffins

Love blueberries? Here’s a simple blueberry muffin recipe!

Streusel Topping:

  • 30g low protein flour
  • 15g sugar
  • 15g butter

Instructions:

  1. Mix until crumbly.

Muffin Batter:

  • 160g milk
  • 2 eggs
  • 90g oil
  • 80g sugar
  • 240g low protein flour
  • 30g milk powder
  • 9g baking powder
  • Handful of blueberries

Instructions:

  1. Mix milk and eggs, then add half the oil. Mix well.
  2. Add remaining oil, mix, then add sugar and whisk.
  3. Combine flour, milk powder, and baking powder. Sieve into wet ingredients, fold to a thick batter.
  4. Fill cups 50%, add blueberries, fill to 90%, add more blueberries.
  5. Sprinkle streusel on top.
  6. Bake at 180°C for 20-25 minutes.
