Flavorful Fajita Quesadillas

  1. Ingredients:
  • 1 pound skinless, boneless chicken breast halves, cut into thin strips
  • 1 (1.27 ounce) packet fajita seasoning mix
  • 1 tablespoon vegetable oil
  • 2 green bell peppers, sliced
  • 2 red bell peppers, sliced
  • 1 onion, sliced
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 (10 inch) flour tortillas

Directions:

  1. Preheat the grill for high heat.
  2. Toss the chicken with fajita seasoning, then cook and stir in a large skillet over medium heat for about 5 minutes, until cooked through.
  3. Preheat a large skillet over medium-high heat and add oil. Cook and stir bell peppers and onion until softened, about 5 minutes.
  4. Assemble quesadillas by placing an equal amount of Cheddar cheese on four of the tortillas. Top with chicken, vegetables, and Monterey Jack cheese. Cover with the remaining tortillas.
  5. Grill quesadillas, turning once, until cheese is melted and tortillas are nicely browned, 2 to 3 minutes per side. Cut into wedges to serve.
