Festive Purple and Matcha Boba Buns Recipe

Hey Tastemakers! I love boba in bubble tea and decided to add these chewy tapioca starch bits to my bakes. The pretty colors are a bonus. With Christmas coming soon, I decided to make a festive purple/matcha pairing. You can definitely create your own flavor of boba buns. I believe brown sugar boba is another well-accepted and flavorful choice too.

Recipe makes 8 buns

Dough Recipe

  • 300g high protein flour
  • 25g sugar
  • 5g salt
  • 3g instant yeast
  • 190g milk
  • 20g butter

Method

  1. Mix everything except butter until the dough comes together and is strong.
  2. Add butter in 2-3 batches and knead until the butter is fully incorporated, and the dough achieves the window pane stage.
  3. Bulk proof the dough until it doubles in size.
  4. Punch down the dough and divide it into 8 equal parts.
  5. Roll into smooth balls.
  6. Brush the top with egg whites and cover with crust dough (refer to crust dough recipe).
  7. Slit the crust dough with a scraper.
  8. Final proof until the dough rises 1.5x.
  9. Bake at 180°C for 15 minutes.
  10. Cool on a rack.

Crust Dough

  • 70g butter
  • 50g icing sugar
  • 30g egg
  • 135g low protein flour
  • 15g milk powder
  • 5g matcha powder

Method

  1. Use a hand whisk to mix butter and sugar.
  2. Add egg and mix well.
  3. Add sieved flour, milk powder, and matcha powder and fold to combine.
  4. Divide into 8 and round into balls.
  5. Cover and chill in the fridge.

Boba Custard

  • 2 yolks
  • 20g sugar
  • 15g corn flour
  • 250g milk
  • 200g boba (any flavor)

Method

  1. Mix yolks, sugar, and corn flour.
  2. Heat up milk in a saucepan. Once the milk starts boiling, remove from stove and pour slowly onto the yolk mixture, stirring continuously.
  3. Pour the mixture back into the saucepan and heat over low heat, stirring until the custard thickens.
  4. Pour into a bowl, cover with cling wrap (leave no gap between cling wrap and custard), and leave to cool.
  5. Once the custard has cooled, add the boba and mix to combine. Place into a piping bag and set aside.

Assembly of Buns

  1. Once buns are cooled, cut the top 20-30% off horizontally.
  2. Remove the middle crumb to create a hole.
  3. Pipe the boba custard to fill the bun.
