Matcha Cheese Wreath Recipe

If you’re a matcha enthusiast like me, you’ll adore this Matcha Cheese Wreath. This delightful treat features a soft, fluffy dough adorned with a rich, creamy matcha cheese spread. Perfect for a special brunch or as an indulgent snack, these wreaths are both visually stunning and delicious.

Ingredients

Sweet Stiff Starter:

  • 40g sourdough starter
  • 120g high protein flour
  • 55g water
  • 25g sugar

Dough:

  • 270g high protein flour
  • 30g sugar
  • 4g salt
  • 1 egg
  • 90g milk
  • 35g whipping cream
  • 65g cream cheese
  • 20g unsalted butter
  • All of the sweet stiff starter

Matcha Spread:

  • 50g softened butter
  • 50g softened cream cheese
  • 30g sugar
  • 40g milk
  • 100g all-purpose flour
  • 7g matcha powder

Method

  1. Prepare the Sweet Stiff Starter:
    • Mix the starter ingredients and allow it to triple in volume, about 7-8 hours at 27-28°C.
  2. Make the Dough:
    • Combine the high protein flour, sugar, and salt in a large bowl.
    • Add the egg, milk, whipping cream, cream cheese, unsalted butter, and the sweet stiff starter.
    • Mix until the dough comes together and knead until smooth.
  3. Bulk Proof:
    • Allow the dough to proof for 2 hours at 28°C.
  4. Prepare the Matcha Spread:
    • Mix softened butter and cream cheese until smooth.
    • Add sugar, milk, all-purpose flour, and matcha powder. Mix until well combined.
  5. Shape and Proof:
    • Punch down the dough and divide it into portions.
    • Roll out each portion and spread with the matcha spread.
    • Shape the dough into wreaths and place on a baking tray.
  6. Bake:
    • Preheat the oven to 180°C.
    • Bake for 17 minutes or until golden brown.
