If you’re a matcha enthusiast like me, you’ll adore this Matcha Cheese Wreath. This delightful treat features a soft, fluffy dough adorned with a rich, creamy matcha cheese spread. Perfect for a special brunch or as an indulgent snack, these wreaths are both visually stunning and delicious.
Ingredients
Sweet Stiff Starter:
- 40g sourdough starter
- 120g high protein flour
- 55g water
- 25g sugar
Dough:
- 270g high protein flour
- 30g sugar
- 4g salt
- 1 egg
- 90g milk
- 35g whipping cream
- 65g cream cheese
- 20g unsalted butter
- All of the sweet stiff starter
Matcha Spread:
- 50g softened butter
- 50g softened cream cheese
- 30g sugar
- 40g milk
- 100g all-purpose flour
- 7g matcha powder
Method
- Prepare the Sweet Stiff Starter:
- Mix the starter ingredients and allow it to triple in volume, about 7-8 hours at 27-28°C.
- Make the Dough:
- Combine the high protein flour, sugar, and salt in a large bowl.
- Add the egg, milk, whipping cream, cream cheese, unsalted butter, and the sweet stiff starter.
- Mix until the dough comes together and knead until smooth.
- Bulk Proof:
- Allow the dough to proof for 2 hours at 28°C.
- Prepare the Matcha Spread:
- Mix softened butter and cream cheese until smooth.
- Add sugar, milk, all-purpose flour, and matcha powder. Mix until well combined.
- Shape and Proof:
- Punch down the dough and divide it into portions.
- Roll out each portion and spread with the matcha spread.
- Shape the dough into wreaths and place on a baking tray.
- Bake:
- Preheat the oven to 180°C.
- Bake for 17 minutes or until golden brown.
