Matcha Topography Cake Recipe

If you’re a fan of jiggly cakes, the Matcha Topography Cake is a must-try. Ingredients

Yolk Batter:

  • 6 egg yolks
  • 70g milk
  • 50g oil
  • 80g low protein flour (cake flour)

Matcha Batter:

  • 7g matcha powder
  • 15g water

Plain Batter:

  • 10g low protein flour

Meringue:

  • 6 egg whites
  • 90g sugar
  • 6g lemon juice

Method

  1. Prepare the Yolk Batter:
    • Mix the oil and milk until the oil is fully incorporated.
    • Add the sieved cake flour and mix until smooth.
    • Stir in the egg yolks until well combined.
    • Divide the yolk batter into two equal parts.
    • Add the matcha paste to one portion and mix well.
    • Add the 10g low protein flour to the other portion and mix well.
  2. Prepare the Meringue:
    • Beat the egg whites with lemon juice on high speed.
    • When big bubbles form, add 1/3 of the sugar.
    • Continue beating and add another 1/3 of the sugar when finer bubbles form.
    • Add the remaining sugar when the meringue shows some lines.
    • Beat until the meringue reaches firm/medium peaks.
    • Divide the meringue into two equal portions.
    • Fold the meringue into each yolk batter accordingly.
  3. Assemble the Cake:
    • Pour half of the plain batter into an 18x18cm square pan, spreading it evenly.
    • Sprinkle a thin layer of cocoa powder over the plain batter.
    • Pour the matcha batter over the cocoa powder layer and use a skewer to even it out.
    • Sprinkle another thin layer of cocoa powder on top.
    • Pour the remaining plain batter and use a skewer to smooth it out.
  4. Bake:
    • Bake at 150°C for 1 hour 15-30 minutes using the water bath (bain-marie) method.
    • Remove the cake from the oven and demould immediately.
