Sweet Stiff Starter:
- 30g sourdough starter
- 90g bread flour
- 40g water
- 15g sugar
Dough:
- 230g bread flour
- 20g sugar
- 4g salt
- 165g milk
- 20g unsalted butter
- All of the sweet stiff starter
Mocha Cheese Filling:
- 400g cream cheese
- 400g whipping cream
- 50g sugar
- 20g coffee powder
- 10g dark cocoa powder
Method
- Prepare the Sweet Stiff Starter:
- Mix 30g sourdough starter with 90g bread flour, 40g water, and 15g sugar.
- Let it triple in volume over 7-8 hours at 27-28°C.
- Make the Dough:
- Combine 230g bread flour, 20g sugar, 4g salt, 165g milk, and all of the sweet stiff starter.
- Mix until the dough comes together and is strong.
- Gradually add 20g unsalted butter in 2-3 batches, kneading until fully incorporated and the dough achieves a window pane.
- Proof the Dough:
- Bulk proof the dough for 2 hours at 28°C.
- Punch down the dough and divide it into 8 equal parts.
- Roll each piece into a smooth ball.
- Final proof at 28°C for 3-3.5 hours, or until the dough rises 1.5x its original size.
- Prepare the Mocha Cheese Filling:
- Combine 400g cream cheese, 400g whipping cream, 50g sugar, 20g coffee powder, and 10g dark cocoa powder.
- Whip everything together until smooth and creamy.
- Chill the filling prior to piping for a refreshing touch.
- Bake the Buns:
- Preheat your oven to 180°C.
- Brush the buns with egg wash.
- Bake for 15-18 minutes or until golden brown.
