Pineapple Tarts Recipe

It’s that time of the year again for pineapple tarts, a must-have for Chinese New Year celebrations. This rich, buttery crust with a melt-in-the-mouth texture encases a core of sweet pineapple jam. I don’t make many types of CNY cookies, but this is definitely on my list. What CNY snacks are you making this year?

Pastry Crust Recipe

  • 250g unsalted butter
  • 370g all-purpose flour
  • 50g icing sugar
  • 20g corn flour
  • 2 egg yolks

Egg Wash

  • 1 whole egg
  • 1 yolk
  • A few drops of oil

Method

  1. Beat butter and sieved icing sugar till smooth. Do not overbeat.
  2. Add the egg yolks and mix well.
  3. Add the sieved all-purpose flour and corn flour.
  4. Use a spatula to fold, finishing by hand.
  5. Use a pineapple tart mold to pipe out the dough and wrap the pineapple jam in the middle.
  6. Bake at 180°C for 8 minutes, remove from oven and apply egg wash.
  7. Bake for another 10 minutes or until it is golden yellow.
