Sourdough Discard Pancake

The best way to use up sourdough discards! I made tons of pancakes over the weekend to clear my discards and prepare for the school week ahead.

There are many ways to serve pancakes—I love them plain or with Nutella. Share with me your serving ideas!

Ingredients

  • 100g sourdough discard
  • 90g milk
  • 1 egg
  • 15g corn oil
  • 85g all-purpose flour
  • 30g sugar
  • 1/2 tsp baking soda

Method

  1. Mix sourdough discard, milk, egg, and oil in a bowl until well combined.
  2. In a separate bowl, combine all-purpose flour, sugar, and baking soda.
  3. Add the flour mixture to the milk mixture.
  4. Whisk until no dry bits of flour remain.
  5. Keep in the fridge overnight or leave on the counter for an hour.
  6. Heat a non-stick pan over low heat.
  7. Scoop batter onto the pan and cook on low heat until bubbles appear on the surface. Flip and cook for another 10-20 seconds.
  8. Spread with your favorite fillings and enjoy!
