Salad Oil Sauce:
- 1 egg (55g)
- 50g sugar
- 2g salt
- 200g cooking oil
- 6g white vinegar
- 2g lemon juice
Method:
- Mix egg, sugar, and salt.
- Double boil to 70°C, whisk until thick.
- Gradually add oil, mix until combined.
- Add vinegar and lemon juice.
Sponge Cake:
- 2 eggs (110g)
- 20g milk
- 20g corn oil
- 30g cake flour
- 25g sugar
- 3g lemon juice
Method:
- Separate egg whites and yolks.
- Mix oil and milk, then add flour.
- Add egg yolk, mix to smooth batter.
- Whisk egg whites with lemon juice and sugar to stiff peaks.
- Fold 1/3 meringue into yolk batter, then combine with remaining meringue.
- Pipe shapes, bake at 150°C for 25 mins.
- Sandwich with salad oil sauce, coat with meat floss, and decorate with melted chocolate.
