Sponge Cake

This adorable doggie-shaped sponge cake is a perfect weekend treat!

Salad Oil Sauce:

  • 1 egg (55g)
  • 50g sugar
  • 2g salt
  • 200g cooking oil
  • 6g white vinegar
  • 2g lemon juice

Method:

  1. Mix egg, sugar, and salt.
  2. Double boil to 70°C, whisk until thick.
  3. Gradually add oil, mix until combined.
  4. Add vinegar and lemon juice.

Sponge Cake:

  • 2 eggs (110g)
  • 20g milk
  • 20g corn oil
  • 30g cake flour
  • 25g sugar
  • 3g lemon juice

Method:

  1. Separate egg whites and yolks.
  2. Mix oil and milk, then add flour.
  3. Add egg yolk, mix to smooth batter.
  4. Whisk egg whites with lemon juice and sugar to stiff peaks.
  5. Fold 1/3 meringue into yolk batter, then combine with remaining meringue.
  6. Pipe shapes, bake at 150°C for 25 mins.
  7. Sandwich with salad oil sauce, coat with meat floss, and decorate with melted chocolate.
